Enjoy FreshTomato and Melon Salad after a Long Day





After a long day at work, most nurses find it easy to eat whatever presents itself first.

A tomato salad is best because it is healthy, has very few calories, yet can be quite filling.

Tomatoes are high in antioxidants and rich in vitamin C.

You can use fresh tomatoes from your garden if you have one, or organic tomatoes.

Here is a simple recipe for a fresh tomato-melon salad.



1 ½ pounds ripe tomatoes cut into ¾ inch cubes

3 cups watermelon cubes.

½ Purple onion peeled and sliced into thin rings

A handful of shredded basil leaves

3 teaspoonful of extra virgin olive oil

2 tablespoons of white balsamic vinegar

Sea salt

Fresh ground black pepper

1 large clove of garlic, passed through a garlic press








Add garlic, onion and shredded basil leaves in bowl with a lid

Place olive oil, vinegar, salt and pepper.

Shake vigorously.

Pour over tomatoes and melon and toss gently.

You can add sliced cucumbers for variety.

This salad is best served chilled.
